Kangra Dham is not just a meal — it's a centuries-old tradition from the beautiful Kangra Valley in Himachal Pradesh. Served during weddings, festivals, and sacred celebrations, Dham is a feast prepared exclusively by hereditary cooks called "Botis" who have carried this craft through generations.
The Dham feast is characterised by its use of yoghurt-based gravies, slow-cooked lentils, aromatic whole spices, and pure desi ghee — all simmered in heavy brass Charotis (traditional cooking vessels). No onion. No garlic. Just pure, satvik food that nourishes both body and soul.

The Sacred Craft
What makes Kangra Dham unlike any other cuisine
👨🍳 The Boti — Hereditary Master Chef
In Kangra, only hereditary Brahmin cooks called Botis are permitted to prepare Dham. They cook barefoot, touch the cooking area with their forehead as a mark of respect, and use no written recipes — only knowledge passed through generations by practice and instinct.
Their rhythmic stirring technique, precise spice ratios, and intimate understanding of slow-cooking in brass cannot be replicated by any machine or modern kitchen.
🏺 Brass Charotis — The Sacred Vessel
Charotis (also called Baltoi) are massive, round-bellied brass pots with narrow necks and thick walls. They are placed over wood fires built in deep trenches — designed to withstand intense heat while allowing curries to cook slowly so flavours bloom over hours.
The brass imparts a unique, irreplaceable taste that defines authentic Kangra Dham. These vessels are heirlooms — some families have used the same Charotis for over 200 years.
🍃 Pattal — The Sacred Leaf Plate
Traditionally, Dham is served on Pattals — plates made from dried Sal or Banyan tree leaves, stitched together with thin sticks. Everyone — from shepherds to royalty — eats from the same Pattal, seated together on the floor. No one gets a special plate or place.
This represents the Dham's core philosophy: equality through food. Nobody rises until everyone finishes. It is a sacred community act.
🌿 Satvik Cooking — Purity by Principle
No onion. No garlic. No shortcuts. Kangra Dham uses only pure ghee, fresh curd, asafoetida (hing), ginger, and hand-ground whole spices — cardamom, cinnamon, cloves, bay leaves, and black pepper.
The "Dhuni" technique — where mustard oil is poured over burning coals and the smoke is sealed into the pot — gives the lentils an ancient, earthy aroma that no modern method can replicate.
